Glazed Turkey Meatloaf

Turkey Meatloaf
1 onion, finely chopped
1 celery rib, finely chopped
2 garlic cloves, minced
1 T olive oil
½ cup milk or plain yogurt
2 eggs
2 tsp. minced fresh thyme
2 tsp. Dijon mustard
2 tsp. Worcestershire sauce
¼ tsp. hot pepper sauce
½ tsp. black pepper
2 pounds lean (93%) ground turkey (don’t use extra lean)
1 1/3 cups fresh bread crumbs (pulse 3-4 slices hearty white bread in mini cuisinart)
¼ cup fresh Italian parsley, minced
½ cup ketchup
¼ cup brown sugar
4 tsp cider vinegar
1. Preheat oven to 350 degrees. Line a rimmed baking sheet with aluminum foil and place a wire rack on top. Place a 10x7” piece of foil on top of wire rack.
2. Heat oil in saucepan over medium low heat. Add onions, celery, garlic, and ¼ tsp. salt. Cover and cook, stirring often, 8-10 minutes, until onion is soft; set aside. In a medium bowl, whisk milk (or yogurt) eggs, thyme, mustard, Worcestershire, hot sauce, pepper and ¼ tsp. of salt.
3. In large bowl, mix turkey, bread crumbs, parsley, cooked onion, and egg mixture until combined. Press mixture into compact mass and transfer to sheet of foil on rack. Form a loaf a rectangle about 9”x6” and 2” tall.
4. Stir ketchup, brown sugar, and vinegar together in a bowl, then brush half over meatloaf. Bake on middle rack for 50 minutes.
5. Brush meatloaf with remaining glaze and bake until the center of meatloaf reaches 160 degrees, about 20 minutes longer. Remove and let rest for 15 minutes before slicing.
