Best Ever Peanut Butter Chocolate Chip Bars

Reese's Peanut Butter Cups coined the slogan "two great tastes that taste great together" and I completely agree. I made these the other day for a friend who exclaimed, “these are the best ever!” and while that might be a slight exaggeration, I must admit they are my current favorite “treat”.

1 cup flour

2 teaspoons baking powder

1/8 teaspoon baking soda

¼ teaspoon salt

8 tablespoons (1 stick) unsalted butter, at room temperature

½ cup smooth peanut butter

½ cup sugar

½ cup plus 2 tablespoons brown sugar

1 teaspoon vanilla

2 large eggs, at room temperature

1 cup semisweet chocolate chips

½ cup oatmeal, quick or rolled

1. Preheat oven to 350°F and adjust rack to middle position. Lightly butter 9x9 baking pan.

2. Whisk together flour, baking powder, soda and salt together into a medium size bowl and set aside.

3. Beat butter, peanut butter, both sugars and vanilla in the bowl of a stand mixer on medium speed until light and fluffy – about 1 ½ minutes. Scrape bowl down with rubber spatula.

4. Add eggs, one at a time, and beat on medium-low to combine, about 10 seconds. Increase to medium speed and beat for 30 seconds. Scrape bowl down to combine all ingredients.

5. Add the dry ingredients and mix on low to combine, about 10 seconds.  Add the chocolate chips and oats and mix to combine.

6. Spread the dough evenly into prepared pan.

7. Bake until the bars are deep golden on the edges and the center is lightly golden and puffed about 20 -25 minutes.

8. Let bars cool in pan on wire rack and then cut into squares.

I'm baking this right now and I just noticed that there isn't an approximate baking time! I know, I know....I should just look at it but I really like a ballpark time.

james

hi Layla - So sorry! They should take 20-25 minutes depending on your oven! I've updated the recipe - thanks for noticing :)

Okay James I am sort of holding on my lap "as we speak" actually as I type to you a recipe for CHUNKY CHOCOLATE PEANUT BUTTER BARS(as seen on Al Roker's show) I am very disappointed to see it is not the same one BUT one by The Cake MIx Doctor - Anne Byrn. Her recipe calls for among other ingredients 1 package of plain yellow cake mix + 1 cup chunky Peanut butter (as she mentions by using CRUNCHY it gives JUST THE RIGHT AMOUNT of CRUNCH) + 1 can Sweetened Condensed Milk + 1 cup sweetened Flaked Coconut This certainly is VERY DIFFERENT and as I have as yet baked EITHER PB BAR I can not really compare (except when I think of the ingredients in my head I also can sort of taste the recipe DOES THAT MAKE SENSE?) I bet Al Roker has not eaten many after that major amount of weight loss though JAMES where in heck is the symbol/text to "PRINT" the recipe from your blog please Oh Yeah as this comment is below one that I posted earlier today SATURDAY 17th December 2011 1PM in SYDNEY AUSTRALIA NOT only do I wish a M.C. but as rather HAPPY NEW YEAR for 2012 My God can you believe it is already the end of the year It seemed only yesterday that the world was carrying on about water/food shortages or something like that at the start of a new century 2000 GEE I HAVE seen SO MANY changes since I was a little girl I can still remember going to Catholic school as a kid of 5 years and walking past and seeing the REFRIGERATOR MAN carry on his shoulder BIG BLOCKS OF ICE to put into peoples fridges to keep their food cold A few kids & I would wait for him to go into a house and then we would quickly CHIP OFF A PIECE OF ICE so we could suck on it on the way to school and didn't we feel triumphant when we got away with it THAT WAS IN 1955 I better go now as my 2 black toy POODLES have been so good and I promised them a walk that was a while ago JUST after one more cigarette , just after one more cooking show on cable POOR LITTLE BUGGERS THANKS for listening I HOPE JAMES
